A twist on the tuna pasta dish Add large tin of Tuna to pasta , add a tin of sweetcorn and a tin of chicken or mushroom soup or both to cover pasta and place in med oven for 30 mins test if cooked eat with fresh bread or as mine like garlic bread or fresh green salald. Quick Choc Mousse Large tub of double or whipping cream, whip till soft peaks, melt a large bar of dark chocolate and blend into the cream .Put into cups/small bowls and leave in fridge to set. Can also be put on a biscuitcrumb base as you do a cheesecake. Also on gingernut biscuits dipped in rum or brandy or as my friend now does sherry Or dipped gingernuts in a row on a plate with the mousse between each biscuit ( very 1970's sweet that one so I was told when I did it ) Jan |

If you have left-over roast beef, lamb or chicken, this is quick and delicious: QUICK BEEF/LAMB OR CHICKEN RISSOTTO: 1 chopped Onion 4-oz sliced Mushrooms 1 can Campbells Condensed Tomato Soup 8-oz Long Grain Rice Left-over roast beef/lamb or chicken, chopped Tablespoon of oil or fat from the roast In a large saucepan, gently fry the onion and mushrooms in a little oil (or beef/lamb fat if you still have some left). Add the rice and stir. Add tomato soup plus a can of cold water. Stir well and bring to boil. Simmer for approximately 20 minutes, stirring occasionally, until rice is absorbed. Add the pieces of beef/lamb/chicken, heat thoroughly and serve. Enjoy, Kathyx |

Chop up chicken breasts an onion and about a cup of dried pasta, throw in a casserole dish, pour a tin of condensed chicken soup over the top add a cup of boiling water and a stock cube mix well and cook for about an hour. you can put in some chopped bacon or use tomato soup for a change. Remember the dry pasta will expand... allow room in the dish as it will soak up the liquid. Serve with garlic bread. You can throw in a handfull of frozen veg too. Marion |

Frittata. Slice and boil some new potatoes, in the meantime fry some chopped red onion, peppers, and some bacon pieces in a little olive oil (or fry light if your watching your weight) mix together 2 eggs, s & p to taste, when tender drain potatoes and toss into the pan, pour over eggs, cook for a few minutes till bottom sets then pop under grill to cook the top, you can add some grated cheese at this stage if you wish. Serve with a crisp salad. You can throw anything you have lurking in the fridge into this dish really, sausages, tomatoes, mushrooms ect the choice is yours. Belle. Any WW out there you can eat this on a No Count diet ( - the cheese of course) |

Cheat's bread and butter pudding - Take one sliced fruit loaf, or slice uncut one. Spread margarine or butter on each slice and layer in an ovenproof dish. Whisk milk and 2 or 3 eggs together and pour over bread. Press down with a fork and leave to stand for 10 mins in the fridge. Press down again so all liquid is soaked up, if insufficient liquid add a little more milk or a little water. Pop in microwave and cook on high for 2 or 3 mins, check and cook on another few minutes, put bowl in pre heated oven for about 10 mins or until risen and crispy on top (you can sprinkle sugar on top if not weight watching) Gas mark 5, and serve with evaporated milk, fromage frais, creme fresh or icecream. An even easier quick desert: open a tin of creamed rice (there is a new one out now made with cream which is wicked), heat each individual serving and stir in a couple of squares of white, coconut chocolate in each dish. (you could use other flavours of chocolate, such as cappacino etc) Enjoy! |

When my daughter was small she had a book called 'Cooking is a Game You Can Eat.' She now has sons and daughters that age and wanted the book for her, but it is out of print. I managed to obtain a copy recently from Canada, postage was more than the book. Hope to unite the book with my grandchildren on Friday. D |

Roast red onions. Remove outer skin from onions and cut the bottom flat, so they will stand up. Toss them in Olive oil, sprinkle with finely ground Herbs de provence. Bake until cooked, about 50 mins depending on size, small ones are better. Dave |

Shaz A good pasta dish if you like Tuna. Cook the pasta (shells or twists) and leave to cool, add tinned tuna, sweetcorn and onion. Mix in with some mayonnaise and a crumbled Italian oxo. If you want it hot, replace the mayonnaise with cheese sauce. Cover with grated cheese, place in the oven or under the grill until cheese is melted. Both delicious!! Lynne |
