Yes I will be making mine from scratch :o) I'm picking up my youngest grandaughter from school today, and she only said she'd come if we could make pancakes! LOL Good job it's not my middle grandaughter - she refuses to eat my pancakes and prefers Aunt Bessies - YUK! I usually have lemon and sugar on mine, but my Canadian neighbour has given me some proper Maple Syrup :o))))) mmmmmmmm - think I might leave work early and make some for lunch as well! Sue xx |

Please can someone put 'fool-proof' weights/amounts for flour etc on here - I'm no good at judging it by guesswork and no-one I ask seems to know how many ounces/mls! Thanks! Maz. XX |

Maz I just use 4 rounded tablespoons of plain flour, half a pint of milk (or milk & water) and an egg. I put it in a jug and mix with my electric whisk. Leave it for at least 30 minutes to settle before you use it. Make sure the fat or oil is smoking slightly before you put the mixture in the frying pan, and don't use too much. Swirl it round the pan until the base is covered. When that side is cooked, loosen pancake and toss! Brown other side, then slide onto plate, add lemon juice and sugar (or whatever you like) and eat immediately!!!!! Sue xx |

I always make pancakes every Shrove Tuesday (and occasionally at other times too). I've still got the scars on my face to prove it, when the hot fat splashed up from the pan! My son loves Scotch pancakes, so this year I'll be making a stack of those. We have them with vanilla ice cream and either golden syrup or maple syrup. My favourites are crepes Suzette, cooked in unsalted butter, flamed in brandy, then smothered in caramelised orange sauce with Grand Marnier. CB >|< |

Oh yes, always make my own! Batter is made ready for when I get home from the country dance class that I teach along with 2 friends (they share the pancakes too!). Always toss them, its good fun. Mum always cooked and tossed the first one over the open fire while burning a piece of mistletoe kept from Christmas, but I cannot remember the exact reason why. Superstition, I am sure, and her Mum always did it. Doubt if Grandad would have approved unless he had a religious link to it. Oh dear, now I'm hungry, good job I have to go to a retiral function where there should be some nibbles. Happy Pancake making! Sheila |

Batter all mixed up now and in the fridge for tonight. Oh and of course it will be lemon & sugar. Not sure if we have any maple syrup left but hubbie might have one of his with golden syrup [uck!] Maz .............. I use 4 ounces of plain flour 2 eggs 9 ounces of milk & water mixed [normally about 6 of milk & 3 of water] I always fry mine in oil as I always mess it up if I use butter. heat oil in pan till hot then pour in a cup and put batter mixture in pan and cook, tossing of course. then I heat the oil in pan again till hot and repeat the process. Yummy every time. Only once have I missed catching the pancake when tossing. Josie |
