seeing the mincemeat cake recipe, reminds me that I replace the fruit with jarred mincemeat in rock buns, gives them a nice moist flavour. |

Glad everyone enjoyed it Jess. I sometimes fill it with raspberries and cream and then it becomes a proper dinner party desert too. Daisy |

Can I just add - seeing as I've seen this thread too late - that I have a really good recipe for New Zealand Carrot Cake, my Step Mother gave it to me and I think it might be one of Delia Smiths? I haven't got the recipe to hand right now, but if anyone would like it then just pm me. Kaye x |

I WAS pure indulgence! WAS because its now in the passed tense- the beggars ate it all! I get the impression that Uncle Gordon, (of the rather rounded waistline) isn't allowed to indulge in such foodstuffs and certainly enjoyed his piece! Thanks daisy , shall deffo make it again |

Jess hope the visit goes well tomorrow! By the way peeps, you can use the same chocolate topping for profiteroles - they look so lovely and glossy and are really, really scrummy. Daisy |

It doesnt look quite done , will leave it in another 5 mins or so . Smells good. the chocolate topping for Daisy's chocolate Jobbie is good - 1/3 in the middle of the cake., 1/3rd on the top , 1/3 in the tummy its yummy!! |

So Jess what was the outcome with the cake. We have all eagerly awaited the end result! You sure started something with this thread. I saw Dianne's cake with the Jamaican Ginger cake/Cream/Mandarins etc and decided there and then I had to 'build' that one. Only trouble is we don't have Jamaican Ginger cakes here and couldn't even find a darn packet mix for a ginger cake. So guess I am going to have to start from scratch! Good Luck with impressing auntie anyway...... and thanks Dianne for your idea! Lyn |

Mmmm. Dunno! added another egg - hadn't put bannanas in at that point because it looked more like crumble topping than cake batter ! was very dry! have flung in banannas and dried fruit now, and await the end result. its in the oven fingers crossed! Thanks for your help , you domestic godesses! |

Oh dear no replies, bit late now, how did it go jess? I would imagine, if it is like the one I used to make, the bananas would add the moisture, depends on the size of the egg too. Ann Glos |

Why not chuck another egg in or add a little milk? You can always turn it into a pudding if it comes out unlike a cake! Good luck. |

no idea what the consistency of that particular recipe should be, but could add a little milk to make a bit softer. |

Jess, banana loafs are usually very moist. depends what size bananas and egg you used. One egg should be enough though. My recipie uses 3 large nanas, if yours were small they won't add enough moisture. Try adding a little milk, but only sparingly till you get the right consistancy. |
