Had some in New Zealand, Mike. Absolutely delicious.

I've made some fish stock and want to have a bash at making some. I have Googled it, but there is such a vast number of Recipes on the Web that I thought that I would ask and use a recipe which has actually been tried and tested, or should that be tasted :-D :-D
