Ello Lauralil - im not a veggie but its easy to sustitute meat - my sis has been one for over 25 years and cooks the same meals as me but uses things like beans in a lasagne instead of mince.

If I recall your Muffys mate - noce to see you :)

Lauralil Report 9 Jan 2008 20:20

For various reasons I am considering becoming a veggie, I've thought about it before but the last three days watching Hugh's Chicken Run have made me think about it seriously.

Now here are my problems:- I am a very lazy cook, don't enjoy it and am not wonderful at planning what I want ahead of time. I understand that I will probably have to get better in these areas if I were to become a veggie, but I do not want to be stuck in the kitchen all evening after a hard day at work. I also cannot afford for it to cost me a fortune. Due to some of the above reasons OH will have to agree to this too (not spoken to him yet as he's not back from work), I cannot see myself standing there cooking 2 different meals, 1 is bad enough.

So now you have a bit of background, here's my question. What do you all eat? Sounds like such a silly question but seriously, not being a great cook, I can't really think past a plate of veg or pasta. Am I a hopeless cause??? Things like lunch for example, I don't eat eggs or cheese so what could I have in a sandwich????? All I can think of is Tuna - we'd have to stick with eating fish otherwise OH def wont agree to this.

Another reason for thinking about this is because generally we are not the healthiest eaters. OH could do with losing a few pounds and although I'm only a size 8, I do have a little belly I could do with getting rid of, plus I am also quite tired a lot of the time and think this is a lot to do with my diet. For these reasons I do not want to go down the route of getting frozen veggie burgers and veggie quick meals etc. This would have to be a healthier option diet as well as backing the principle behind it.
If I could bring my food bill down too by cutting out fresh meat etc then that would also be helpful - honestly though, do you think this element of it is likely? Ideally I'd like to be able to save enough to have organic veg delivered. We are quite lazy shoppers (cor I'm painting us in such a good light here.lol) and tend to only go once a month as there are only 2 of us. If I could afford to have fresh fruit and veg delivered (we have a company that keeps putting leaflets through the door) with the bonus of it being organic, then I'd be really chuffed.

I don't want much do I.lol. Any suggestions/help would be much appreciated.
