Firstly Gravy is not healthy. Lol.

Why not boil some lovely new potatoes, veg of your choice, and make a lovely homemade parsley sauce with just a little butter to top of your gammon. We have it at least once a month.

Lol Colin, as you know I am an ex Midland girl. Plus an ex landlady that did loads of cooking in loads of Midlands pubs.

But times change and I am a little old fashiond now.
As I moved further north i could not understand why folks expected a Yorkshire Pud when they had any meat.
Trying to budget, I felt if you had Sage and Onion stuffing with your Chicken and Tyme and Parsley with Lamb you did not get Yorkshire Pud. I was bought up to belive that you only had Yorkies when you had Beef.

But I must admit my OH has mint sauce with whatever our joint is and 18yrs old has Cranberry Sauce with every cooked dinner.

I think Ive put on half a stone thinking about the food on here today :):) Us southerners are becoming more and more Yorkshire pud eaters since Aunt Bessies arrived to, mind you I dont think you could beat good old fashioned home made ones :)
Im also another who likes mint sauce with roast potatoes, dosent matter what meat it is really :):)

Our ham/gammon I simmer slowly in the preserving pan (usually just fits) and then about 40 minutes before cooked. I remove - (saving the lovely stock for vegetable soup), skin, criss-cross with sharp knife, sprinkle with mixed spice and then brush in with honey. piece each 'diamond' with a clove. Finish cooking in oven and enjoy.

The first meal off the ham - my lot always want the same, ham, egg and chips! Also serve with mustard or a pepper sauce, potatoes (cooked anyway), roast veg or steamed veg. - whatever takes your fancy. Serve cold with various types of pickles, salad, beetroot, lots of crusty bread/rolls. Not a bit ever goes to waste!

Colin, after many many years I have even got my southerner OH eating and enjoying black pudding!

However traditionally Yorkshires should be eaten as a first course with lots of gravy.

Scalloped potatoes and tinned corn!

As I have mucked up on my "Christmas Recipe" thread, I can't remember if scalloped potatoes are eaten over there :(

Scalloped Potato Recipe:

6 medium potatoes, peeled and thinly sliced
4 tablespoons butter
3 tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups milk
1 small onion, finely chopped

Preheat oven to 325ºF.

Heat 3 tablespoons of butter in a saucepan over low heat until melted. Blend in flour, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Gradually stir in milk, 1/2 cup at a time. Heat to boiling. Boil and stir 1 minute.

Arrange potatoes in greased 2 quart casserole in 3 layers, topping each layer with part of the chopped onions and 1/3 of the sauce. Dot the top with the remaining 1 tablespoon of butter, broken into little pieces.

Cover and bake until potatoes are tender, about 60-70 minutes. Let stand 5 to 10 minute before serving.

Serves 6

Gammon is bacon. Can be bought as a joint or in slices, thicker than a rasher of bacon and usually round.

If you google Gammon there is a Delia Smith recipe with black treacle involved - sounds wonderful.

gammon joint in pan with a few peppercorns, rough cut carrot, celery stick, a bay leaf cover with some water and juice and grated rind of 1 orange. boil up for about an hour. remove from pan, score fat and smear with marmalade. bake in the oven for another 1 - 1.5 hrs. serve with mashed spuds or new spuds and pease pudding and carrots/cabbage.
