Chicken Pasta pasta (penn) 2 good side chicken breasts cut into chuncks 3/4 slices of bacon cut into pieces peas sweetcorn tin of campbells chicken soup 10ozs milk grated cheese fry the chicken & bacon until nicely browned (about 5/10 mins). Mix soup & milk together & add to chicken & bacon & cook gently for 5 mins. Add peas, sweetcorn and seasoning. Cook pasta, then add chicken mixture to it, Cover with grated cheese and put in the oven for 20/30 mins Annie xx

hi Nana Anna i do look at recipe books, but sometimes feel they are too complicated with having to do this and that. i'm the sort of person who can't boil an egg at times, well unless you want it very hard lol (yes i know, very sad) I'm not a very confident cook, so the easier the better. i will try yours and everyone elses and thank you all very much - bang goes the diet then lol keep them coming... LEMONADE SCONES Simple to make and never fails recipe 3 cups Self raising Flour 1/2 Cup Castor sugar 1 Cup Lemonade 1 Cup Cream Sultanas (Optional) I prefer Plain Scones) Sift flour into bowl, add and mix in sugar, pour cream and lemonade into dry ingredients mix well. Turn onto floured board and cut with scone cutter. Place on a Greased (or I use Baking paper) tray Cook for about 15-20 minutes in a hot oven 200C until risen and golden on top Can freeze just bring out of freezer and Microwave for 30-40 seconds. Great for a quick morning tea if visitors just happen to pop in. Regards Jackie

A few Greek Meze (ideal for a warm evening) Saganaki Haloumi (Cypriot cheese) Flour Lemons Olive Oil Slice the Haloumi (0.5cm thick) and cover in the flour. Heat the Olive oil in a pan and when hot fry the Haloumi until golden brown and crispy. Lay the Haloumi onto kitchen roll to drain the excess oil. Then place on a plate, squeeze the lemon juice onto the slices and serve with Pitta Bread. Tzatsiki Cucumber Garlic Dill Greek Yoghurt Lemon CAREFULLY grate the cucumber into a bowl and add the dill, yoghurt, chopped garlic and a squeeze of the lemon. Keep in the fridge until ready to eat. Easy Morrocan Bread (an alternative to Garlic Bread) A french baguette Butter/margarine Garlic Paprika Cumin Tomato paste Mix in a bowl the butter, garlic, paprika, cumin and tomato paste (I don't use exact amounts, I prefer to season to taste). Slice the bread at an angle (not all the way through) and butter all sides with the herb butter. Wrap in tinfoil and either cook on the BBQ or in the oven until the butter has melted and the bread is crispy.

For all you sweet lovers out there. Bread and butter pudding 6 thin slices of white bread, 50g/2oz butter, 50g/2oz currants or sultanas or both! 40g/1.5oz caster sugar, 2 lg eggs, 600ml/1 pint milk (skimmed if on diet)lol remove crusts from bread, spread slices thickly with butter on one side, cut into squares or fingers. layer the bottom of your heatproof dish with some of the bread, sprinkle with all the fruit and half the sugar. Top remaining bread buttered side up then sprinkle again with the rest of the sugar. Beat eggs and milk well together, strain into dish over bread. Leave to stand for 30 mins so bread absorbs some of the liquid. Bake in the centre of the oven on a moderate heat 160c/325f/gas mark 3 for 45min to 1 hour or until pudding is set and the top is crisp and golden. Annie xx

Stir fry a mixture of vegetables as liked in a small amount of olive oil: -e.g. Mushrooms, chopped green beans, cauli, broccoli, thinly sliced courgettes, tomatoes, thinly sliced carrot, red, yellow, orange peppers, onion. When almost cooked add defrosted or fresh cooked prawns and a tin of sweetcorn, stir in a jar of stirfry sauce or a dessert spoon of sweet chilli sauce, serve with boiled rice. Ann Glos

Fry one onion, add small chicken pieces, fry until brown. Add roughly chopped mushrooms, S & P to taste and finally add creme fraiche (don't boil). Serve with rice or pasta. POTATO BAKE Serves 4 Potatoes about 4 large ones Instant Chicken Soup 200mls Fresh Cream Tasty Cheese (I Use Fully Matured) Garlic (optional) Salt and Pepper to taste Peel and slice potatoes into rings Par boil potatoes still firmish Layer them in a buttered Casserole dish Mix cream and instant Chicken soup together with some salt, and Pepper and garlic, pour over potatoes, top with cheese and bake at 180C for about 25 minutes. Great to have with a BBQ instead of the usual Potato Salad

Open a tin of baked beans and mix with a tin of tomatoes, some dried chilli and lightly fried onion. Put on top of a jacket potato and add some grated cheese. Place under grill (or in oven) until cheese is melted.

Quick and Easy Chicken pie Cut up some chicken fillets into 3 inch pieces and pan fry into cooked. Add chopped onions. Use some shop bought flaky pastry and line a pie dish. Put the chicken and onion into a bowl and add a tin of concentrated Mushroom soup, mix thoroughly. Spoon the chicken mixture into the pie dish, and top with a pastry lid. Brush with beaten egg and place in the preheated oven (see pastry instructions for how long to cook for). Serve with gravy and mash

With a sharp knife slit a pocket in some chicken breast fillets. Stuff each pocket with a tablespoon of Philadelphia. Wrap 3 or 4 rashers of streaky bacon round each fillet. Pop in the oven for half an hour or so until done. Lovely with some new potatoes and veges. Dianne

Using a small oven dish, slice boiled potatos and layer them on the bottom, Slice up brie cheese and layer on top of potatoes, then layer streaky bacon on top of that, put into a med to high oven for about 15-20mins or until bacon starting to brown. Serve with fresh crusty bread and salad. ummm yummy Please add yours, Annie xx
