I remember Fat Rascals, wow they sure bring back memories Fat Rascals Ingredients 3 cup All purpose flour 3/4 cup Packed golden brown sugar 4 tsp Baking powder 1 tsp Ground cinnamon Pinch of salt 4 tbsp butter, cut into pieces 2 large Eggs 1/2 cup Chopped candied peel 1/3 cup Dried currants 1/3 cup Golden raisins 1/4 cup Milk 1 Egg, beaten for glaze 20 Glazed Cherries, Slivered almonds halved 20 Rascals Preheat oven to 400'F. Grease 2 large baking sheets. Mix first 5 ingredients in large bowl. Add butter; rub until mixture resembles breadcrumbs, Add 2 eggs, candied peel, currants, raisins and milk; stir to form soft dough. Divide dough into 20 pieces, Shape each into ball. Arrange on prepared baking sheets. Flatten tops. Brush tops with egg glaze. Decorate each with 2 Glazed cherry halves for eyes and slivered almonds for smile. Bake until golden brown, about 15/ 20minutes. Regards Jackie |

Hi Joan Just seen this thread and went and looked in a Yorkshire cook book. Fat Rascals were originally made to use up left overs i.e pastry , and dried fruits , they were served warm smoothered in butter. The recipe given in the book doesn't have any spices or candied peel , but it does say that the recipe has been adapted over the years and some now have mixed spice , nutmeg or cinnamon in them. I have seen loads of different recipes for Fat Rascals. The cooked fat rascal usually has two chrries ( or similar ) and 3 or 4 almonds ( or candied peel ) on top making it look like 2 eyes and a mouth Jan x |

Oh thank God I've found this thread. Fat Rascals are sooooo scrummy. Had one in Bettys when we visited York in June. Well, actually had a lot more than one but I'm so skinny it was essential eating!! lol Mine definitely had candied peel, cherries and almonds, was served hot and I ate it with lashings of butter. Photo on Waitrose food site - just google fat rascal betty's. Very, very hungry now! Daisy |
