I am sorry to hear about your Mum but how wonderful that she and your Dad were able to leave you enough to do all that to your house. I am sure they would approve and be proud of what you have achieved with the money. <3

Hello Everyone else I haven't said thank you to yet :-D

As some of you may know already, my lovely Mum died very peacefully on Boxing day and thanks to her and Dad's many years of hard work, I received an inheritance from them. We have used it to get double glazing, a new kitchen, carpets and flooring, all of them very badly needed!

We would never ever have been able to do all this without their lifetime of sacrificing so they could leave us something.

I hope they would be proud of what we have done with the money.

I know I am not ashamed to open my front door anymore:)))

The cooking has reached a different challenge in that I now own a double oven with integral grill. The bottom oven is fan assisted, I can now do a roast without too many problems and have the confidence to try new recipes out.

It is roast beef today with Aunt Bessie puds ....we have our brand new 4 day old grandaughter visiting for the first time, so I will be off the boards until this evening.

Love to all my very good cyber and real life friends on here.

This is the pavlova I make - never had a failure. I use a springform tin. Cup measurements are Australian standard 250ml.

6 egg whites at room temperature, pinch salt, 2 cups caster sugar, 1+1/2 teaspoons vinegar, 1+1/2 teaspoons vanilla. Cream & your choice of fruit.

Preheat oven to 230C/450F No idea about Gas Marks, we don't have them in Oz.

Beat egg whites with salt at high speed until soft peaks form. Add sugar, 1 Tablespoon at a time, beating well after each addition. Stop beating when all sugar has been incorporated, then gently fold in vanilla & vinegar.
Pile mixture onto a plate or use a springform cake tin (20cm/8") & lightly smooth top.

If using an electric oven put pavlova in oven & bake 45 mins, then turn oven off and leave with door shut for one hour.

If using a gas oven turn oven to lowest temperature and bake 1+1/2 hours.

Remove from oven and allow to cool completely.

The sugar should be put in a Tablespoon at a time. That's what my pavlova recipe says.
