Hi

Just been reading this thread. Do love your humour. Hope you don't mind me butting in.

Saw you were having thoughts about a veggie meal.

When we eat out here and we've had local dishes, which have a high meat content, we sometimes don't want a meat meal the day after.

I have come up with a very simple meal that can be easily made. I have adapted it for when we have cold meat over.

For 2 people

Small amount of butter or oil
Mixed herbs (to taste)
Garlic to taste
120gms or 1/4 lb mushrooms
1 tin of tomatoes
1 tin beans - butter beans or best we've found is fagioli beans
Splash of red wine to taste
gravy granules to thicken at last minute

tin size about 400 gms

Melt butter in saucepan, add herbs and garlic, cook for about 1 minute, put in mushrooms and cook for about 5 minutes. Add tomatoes, wine and beans, bring to the boil, cook for 10 minutes. Add gravy granules to thicken. Meal ready

I serve with either fresh crusty bread or garlic bread. You can add salad if you wish but we find it very filling.

Variations

You can add onions and sweat them off before adding mushrooms. Onions done like this give OH indigestion so I use onion gravy granules at the end. A chile can be added at this stage to pep it up.

You can add meat. Cooked chicken is nice with it, I add any cold meat when it has just come to the boil and cook for 15 minutes. Cooked sausages cut up into bite size chunks are very good.

If you seperated a portion after it comes to the boil and continued to cook it you could add meat to the rest and continue cooking. Sausage can be added to both portions as your DIL could have veggie ones.

Sausages can be pre cooked and then the meal would only require 2 saucepans.

Hope you find this useful as we enjoy it.

regards

pat

Oooo, i am soo sorry if i had you fretting about my whereabouts, i really am.

Island (i like to call her Dotty!) was right when she said i needed a bit of a break. Soo i flew orf to the Great Exuma Island in the Bahamas in search of me "Mo Jo"

I did consider O'rstralia in search of my boomerang that never came back, but i thought that finding me "Mo Jo" was more important.

If either Island (Dotty i like to call her!) or Dizzy tells you that they received a PM from me this week............T'is a big fat juicy fib, honest!
I had no h'internet connection on the Isle of Exhoooomah!

Now, please don't get me wrong here, cos i really doo appreciate your concern...........BUT, how comes, yeah, right.......a thread that started out about MOI....ends up talking about Pizza and Veggies!!

Huh!! Anyways, orf to bathe in a bath full of after sun oil and sharpen the end of me nose!!
:-D xxx

BC - it could be Deadly Nightshade :-0 Very similar to potato plant!

Ann, I think quiche/flan is a good idea. I always make that if I have vegetarians round for a meal. With veg/salad, of course.

Prickles - just give us a little sign that you're OK - leave a puddle on the floorboards or something :-D
