Catherine I believe it's more tricky tracing Irish records (I currently have an adoption researcher looking for my birth father), but once you have the birth certificate, you would need to start looking through electoral registers then onto marriages to see if there was a name change. Back to electoral registers again and also looking for any further births under her married name. I'm sure there will be someone a bit more knowledgeable than me, as due to various circumstances I had an adoption researcher doing my tracing rather than doing it myself. Hope that this might be a bit of help though.
